Maltobionic Acid is an organic compound, also known as Glucuronic Acid. It is white or almost white crystalline powder that is soluble in water. Maltobionic Acid has a sweet taste and acidity.

In the food industry, Maltobionic Acid has antioxidant properties and can be directly converted into antioxidants from starch or maltose already present in food products through enzymatic catalysis. This antioxidant can be used on the separation part of food products, and then added back to the food production method or final food product, or by adding relevant enzymes to the method to produce antioxidants as an integrated part of the food production method.
